Misato Soba

Excellent broth in a quaint but simply named soba shop

I've come to learn that the uniqueness of Okinawan style soba dishes comes from the soup base that the wheat-based noodles are submerged into. My favorite broth by far is the combined pork and katsuo (dried shaved fish) base served at Misato Soba in northern Okinawa City. The soba dish is simply rich without the greasy taste had with most purely pork based noodle dishes. Jyushi rice and bitter fuuchiba leaves are included in the price but served on the side; dunk these slowly as you eat or all at once to enhance the taste of the dish. All dishes at Misato Soba are about 600 to 800 yen each. The beautifully decorated Ryukyuan themed restaurant is located behind the Ryukyu Bank that is on Route 75 in Okinawa just south of its southernmost intersection with Route 224. The noodle shop is open 11:00 ~ 20:00 daily; there are two parking spots at the restaurant and ample parking on adjacent side streets.
