There are plenty of attractive, gentle hikes within easy reach - on the Miura peninsula, or Mount Takao or Mount Oyama. There's a book called "Day Hikes From Tokyo" which I've used to find a few nice ones near where I live.

Further west, there are some longer hikes on and around Mount Mitake, which is also having a free monthly geisha event until November - http://tenku-geisha.com/

My absolute favorite is Nokogiriyama in Chiba Prefecture.  The entire mountain is part of a temple and was once a rock quarry.  Something to see around every corner.

I'd recommend going to Takao-san in the western suburbs of Tokyo. It's a great hiking spot second to Mt. Fuji.
