Spring is already here, and at bills, that shift in season comes with the return of its annual “Hanami at bills” menu across its Japan locations. Running from March 24 to April 21 2026, the limited-time offering leans into the atmosphere of the cherry blossom season, bringing it indoors with soft sakura displays and a lineup of dishes built around interesting floral flavors.

The highlight of the 2026 menu is its balanced mix of flavors. The combination of floral notes, citrus, and gentle sweetness ties the menu together with both lighter and more indulgent touches.

First, they have the oolong tea and cherry bundt cake, which is more substantial than it first appears, with a noticeably generous slice that makes it quite filling. The texture is moist and soft, with grounded oolong tea adding a gentle, fragrant depth. Small pieces of seasonal cherry are scattered throughout, giving little bursts of sweetness as you go. It works well on its own but also pairs naturally with coffee or tea.

Next, the Shokupan French toast with cherry compote, mascarpone, and pistachio returns by popular demand, offering a richer and more nuanced flavor profile. What stands out most in this dish is the citrus note running through it… and that brightness cuts through the sweetness of the mascarpone and the fruit, keeping the dish from feeling too heavy. It is also freshly made with bills’ very own Japanese Shokupan instead of a normal brioche. The cherry compote adds a slight tartness, while the pistachio gives a subtle nuttiness and texture. Together, it’s balanced—sweet, creamy, and fresh at the same time, and easy to finish despite how indulgent it looks.

In addition to the food menu, the seasonal lineup includes a non-alcoholic hibiscus spritz, which leans fully into refreshment, coming across as especially mint-forward with a cooling finish. Made with hibiscus and rosehip tea, lime, and soda, it has a light tartness, but it’s the house-made mint syrup that really stands out, giving it that crisp, palate-cleansing quality. The fizz keeps it lively, and overall it drinks easily—something you’d keep reaching for as the weather warms. It also pairs well with the oolong tea and cherry bundt cake, making it a great choice if you prefer something lighter with your cake than regular coffee or tea.

The “Hanami at bills” menu is available for a limited time only and may vary slightly by bills’ location—in Ginza, Yokohama, Odaiba, Omotesando, Osaka, Kamakura, Tamagawa, and Fukuoka.

This limited event continues to build on bills’ approach to seasonal dining, incorporating elements of Japanese culture into its existing menu style while maintaining its focus on simple, ingredient-driven dishes. Reservations and availability vary by restaurant, especially during peak cherry blossom viewing periods when demand increases—particularly for groups.

Rooted in its origins, bills is known for its laid-back Australian approach and simple, ingredient-driven dishes—like the scrambled eggs once dubbed among the world’s best. Over the years, the restaurant has built a loyal following. Seasonal events like “Hanami at Bills” change slightly each time, so it’s worth coming back next spring to see how the menu evolves.
