'Festa del mare' is a wonderful Italian restaurant for guests of the Amakusa Tenku-no-Fune Hotel. Chef Nobuyuki Nakamura uses local Amakusa products to create his constantly changing, seasonal meals. The dinner course that was included in our hotel stay in January was mouth-watering, each course better than the last. Breakfast the next morning was also delicious, and included amazing views of Shimabara Bay.

Very interesting to see how the chief create foods from local produce into his/her speciality (Japanese, Chinese, French, Italian, etc.). Which do you recommend - fish or meat this time?
Chef Nakamura is fantastic - previously he worked at the Ritz Carlton Okinawa and in Karizawa. Both Dishes were included in my meal, but the beef was especially good.
