The founders of this organization promote Japanese food culture by sharing modern recipes that respect both traditional customs and the environment for a harmonious future.

For this particular class, you will utilize okara (the soy pulp left after making soy milk) to make tasty granola! Instead of throwing away this byproduct, you can reinvent it into a unique snack. Then, you can whip up the soy milk for a creamy garnish. At the end of the course, you will be left with an eco-friendly and flavorful snack you can feel good about.

Soybeans and Sustainability

Soybeans are an indispensable ingredient in Japanese cuisine and give us food staples such as tofu, miso, soy sauce, and natto (fermented soybeans). In addition to their versatility, soybeans are also an excellent sustainable source of protein as they are easy to grow, require fewer resources than meat-based proteins, and do not produce carbon emissions.

Given the big impacts of this little bean, Kamakura Bento Cooking seeks to transform soybeans into delicious and beautifully presented dishes that not only highlight the beans’ delicate flavors, but also encourage people to add sustainable practices to their lives.

I know only one way to use okara (to boil pork belly for Nagasaki Style braised pork). I could use more ideas on how to consume okara.
